Penne de lentilha vermelha

Took a chance on this for a weeknight dinner and the nutty flavor really comes through even with a simple marinara on top. The penne holds its shape nicely and doesn’t turn to mush, which I appreciate. Definitely a solid swap when I want something lighter than regular pasta.

That light orange color is so appetizing on the plate, and the nutty flavor actually comes through without needing much sauce. Boiled up firm and held its shape perfectly in a cold pasta salad, which is exactly what I hoped for.

Cooked up a big batch for meal prep and the color alone made the whole container look more appetizing than regular pasta. The mild nutty taste came through just enough to keep things interesting without overpowering the sauce.
